Grilling

Preheat the grill to 450°F - 500°F (medium-high heat). Grill the tender medallions based on your preferred doneness: for rare, grill for 3-4 minutes per side (internal temperature of 120-125°F); for medium, grill for 5-6 minutes per side (135°F); and for well-done, grill for 7-8 minutes per side (160°F). Once cooked, rest the steak for 5 minutes before serving to allow the juices to redistribute.
